This highly sought-after blend results from a collaboration among a diverse group of producers, all committed to the organic cultivation of coffee in partnership with Bon Café in Honduras. Handpicked cherries are processed at ecological wet mills on-site, a method facilitated by Bon Café that conserves water and time by allowing depulping and washing to occur simultaneously, resulting in an 80% reduction in water usage compared to traditional wet mills. This approach also allows for the recycling of pulp waste into organic fertilizer. Honey water is treated in oxidation ponds, and weed control is performed manually with machetes to avoid the use of herbicides. Through organic practices, all producers involved in this lot have successfully expanded their growth and processing capacities, thereby creating employment opportunities within their communities.
